We tested the sugar content of two batches of Kefir Soda made with our Kefir Soda Starter, at the CanBiocin Lab. Kefir Soda

Summary of the analysis: 

1. Kefir Soda beverage made with unsweetened orange juice: 
  • Kefir Soda made from 2 cups of unsweetened orange juice + 2 cups of water 
  • Starter: 1 sachet Cutting Edge Cultures' Kefir Soda Starter (2 grams)
  • Other details: Bottles fermented at room temperature, not in direct sunlight, burped daily to alleviate gas pressure
  • Fermentation duration: 4 days (96 hours)

Results:
Sugar content was reduced by ~82% after 96 hours of fermentation. (Decrease from 4.71g/100g to 0.86g/100g)
Subsequent tests showed 100% reduction of sugar content. (Decrease from 3.81g/100g to 0.00g/100g [below the measurable range]).

2. Kefir Soda beverage made with coconut water: 
  • Kefir Soda made from 2 cups of coconut water + 2 cups of water 
  • Starter: 1 sachet Cutting Edge Cultures' Kefir Soda Starter (2 grams)
  • Other details: Bottles fermented at room temperature, not in direct sunlight, burped daily to alleviate gas pressure
  • Fermentation duration: 4 days (96 hours)

Results:
Sugar content was reduced by ~40% after 96 hours of fermentation. (Decrease from 2.41g/100g to 1.46g/100g)
Subsequent tests showed 80% reduction of sugar content. (Decrease from 1.71g/100g to 0.335g/100g)

Conclusion: 

Fermentation significantly decreases the amount of sugar remaining in the final fermented beverage. Overall, fermentation of coconut water or orange juice with the Kefir Soda Starter, if done according to the instructions, can reduce the sugar content significantly while producing a healthy probiotic beverage.
