Strain Selection
We are well aware of the importance of strain characteristics, and are therefore very careful regarding strain selection. We have invested in testing our L. reuteri strain for both bacteriocin effect and cell binding, to confirm that it yields the desired characteristics for this species.
CFU Counts in Cultured Dairy
We are in the process of testing batches of cultured dairy made with our LR Superfood starter at an independent Microbiology Lab. These tests use flow cytometry technology, which is the most accurate method available to determine the number of live cells per gram. We will publish the results as they become available*.
