Savory sourdough breakfast pancake

This recipe is savory.

The rich, flavorful, and filling sourdough pancake is made from discarded sourdough (the leftover sourdough after feeding your starter).

There are no eggs in the dough. We only use the sourdough itself for the pancake. The eggs listed below are for the toppings, as seen in the picture. 

Prep time: 5 minutes (cook time: 10 minutes)
Serves: 1

Ingredients:

  • 3/4 cup discarded sourdough 
  • 2 hard-boiled eggs (for the toppings)
  • A handful small chunks of cheese (for the toppings)
  • Butter or olive oil ,enough to generously grease the frying pan
  • Salt

Instructions:

  1. Melt butter/olive oil in frying pan.
  2. Pour the sourdough into the pan and fry on medium-high heat till bubbles form on the surface.
  3. Flip and cook until the underside is browned. Remove from heat.
  4. Top with eggs and cheese.

A note on flavor: As the name suggests, sourdough is sour. A pancake made with sourdough will taste different than ordinary pancakes. Take this into account if serving to a person with no previous experience of sourdough.
