Today's nutritious recipe uses two superfoods: whey and avocado.
Whey is a nutrient-rich translucent liquid that occurs naturally in dairy fermentation.
If your homemade cultured dairy separated into curds and whey (solids and liquid), know that this is very common.
The whey contains many nutrients, is pleasantly tangy (courtesy of long fermentation), and is commonly referred to as 'liquid gold'.
Together with the avocado, this is a powerhouse of goodness.
For the dressing, you can use whey from any of the following:
- L. Reuteri Superfood
- L. Gasseri Superfood
- Kefir
The dressing will be lightly tangy and will pair well with many different salads. For the salad in the picture, use lettuce, tomato, hard-boiled eggs, cheese, cold cuts, cashews, and avocado -- all coarsely chunked.
The dressing:
Makes: 1 small jar
Prep times: 5 minutes
Ingredients:
- 1 cup whey
- 1 chunk of ripe avocado
- A splash extra virgin olive oil
- Salt to taste
- Ground black pepper to taste
Instructions:
- Mash the avocado
- In a bowl/jar combine all ingredients. Mix well.
- Add to salad or refrigerate.
