Introducing Kefir Soda! A refreshing, naturally bubbly probiotic drink.
While bearing some similarities to kombucha and water kefir, Kefir Soda is much simpler to make: You add powdered Kefir Soda Starter to fruit juice or coconut water, add some water, and let it ferment for several days on the counter. That's it.
It's really easy.
The Kefir Soda starter is a powder that completely dissolves in liquid. It's comprised of strains and yeasts that metabolize the natural sugar in fruit juice or coconut water.
You won't find Kefir Soda in the stores. It's truly artisanal and unique. We sure hope it stays this way!
If you're familiar with DIYing kombucha or water kefir, this one will be a cinch in comparison.
Kefir Soda doesn't involve SCOBYs, teas, grains, or temperature control, nor does it require a long wait or second fermentation. It ferments at ambient temperatures, in one go, and is ready for consumption within a couple of days. Subsequent batches ferment even faster. Remember to keep some of the resulting beverage as a starter for future batches!
As with other artisanal fermented staples containing active cultures, fermentation might take a little longer in the first batch and in colder kitchens. No worries, just let it ferment for a little longer if needed, until the live cultures kick into full gear. Subsequent batches will be faster.
Now let's talk equipment.
You'll need a thick, resilient flip-top brewing bottle that withstands high pressure, and you will need to burp it often, because, wow, does this thing fizz!
What to expect of the flavor?
If you're familiar with homemade kombucha or water kefir, then it's something akin to that. A mature taste, subtle and exquisite, pleasing to the adult palate. Don't expect it to be anything like commercial soda.
Only a trace of the original sweetness will be perceptible in the final drink. Much of the natural sugar from the juice/coconut water is consumed by the starter culture's bacteria and yeasts during fermentation. Our research shows a significant decrease in sugar content.
