Here's an idea for a quick light meal: a summer salad with probiotic vinaigrette!
This recipe will work great with any of the following cultured dairy:
- L. Reuteri Superfood made with our L. Reuteri Superfood starter
- L. Gasseri Superfood made with our L. Gasseri Superfood starter
- Probiotic yogurt made with our probiotic Yogurt Plus starter
Another option:
- Kefir made with our Easy Kefir starter
Serves: 1-2
Prep times: 5 minutes
Ingredients:
- A handful coarsely shredded lettuce
- 1 tomato, coarsely diced
- 1-2 hard-boiled eggs, cut into chunks
- Cheese of your choice, sliced or diced (Swiss cheese in the picture)
- A few cold cuts, sliced and rolled
- A handful nuts or seeds of your choice (cashews in the picture)
- For the vinaigrette:
- 3/4 cup cultured dairy (both curds and whey. Use more curds than whey for a thicker consistency, and more whey than curds for a thinner one)
- A splash extra virgin olive oil
- A squirt Dijon mustard
- Salt to taste
- Ground black pepper to taste
Instructions:
In a bowl combine all ingredients. Stir. Serve or refrigerate.
