Quick recipe: Greek Tzatziki with cultured dairy

Greek Tzatziki

On the menu today is a super fresh Greek Tzatziki, made with  homemade kefir. 

You can easily swap the kefir for L. Reuteri Superfood (which is very similar to yogurt but is not technically a yogurt -- more on that here), or homemade yogurt.

And don't forget to include both curds AND whey (solids and liquid) from your cultured dairy (in case it has separated during fermentation). This is a great way to use both! The whey will add flavor and good bacteria, and will make the consistency a bit less thick for those who, like the writer of this recipe, prefer the veggies to stand out more...

Prep time: 5 minutes
Serves: 4

Ingredients:
1 large firm cucumber (or 4 small firm cucumbers), diced
2 cups homemade kefir (or L. Reuteri Superfood or yogurt)
4 pickled cucumbers, diced
1 clove garlic, pressed
2 tbsps. fresh dill, chopped
1 tbsp. fresh mint, chopped
2 tbsps. squeezed lemon or apple cider vinegar
Salt and pepper to taste

Instructions:
Combine all ingredients in a bowl, season to taste, mix, and serve (or refrigerate to let the flavors set).
