Super fresh Greek Tzatziki with homemade fermented dairy

Greek Tzatziki

This recipe will work great with:

Did your fermented dairy separate into solids and liquids? If so, don't forget to include both curds AND whey (solids and liquid) in this recipe. This is a great way to use both. The whey will add flavor and good bacteria, and will make the consistency less thick.

Prep time: 5 minutes
Serves: 4

Ingredients:

  • 1 large firm cucumber (or 4 small firm cucumbers), diced
  • 2 cups fermented dairy of your choice (both curds and whey)
  • 4 pickled (or fermented) cucumbers, diced
  • 1 clove garlic, pressed
  • 2 tbsps. fresh dill, chopped
  • 1 tbsp. fresh mint, chopped
  • 2 tbsps. squeezed lemon or apple cider vinegar
  • Salt and pepper to taste

Instructions:
Combine all ingredients in a bowl, season to taste, mix, serve. (Or refrigerate to let the flavors set)
